52 on Fridays (20/52) In the Kitchen



I want to write something profound here. If I tried really hard I'm sure I could find away to lace together cooking, parenting, and life in this post about cheesecake. But let's be honest. You just want some cheesecake, don't you? Thanks to Patent & the Pantry's Microwave Lime Cheesecake recipe, you can have what you desire in record time.

Don't be too quick to judge this recipe because it involves a microwave. As a self-professed cheesecake snob, I was certain that I would not enjoy a quick cheesecake. How could it possibly be good without the perfect mixing time, the water bath, the dual temperature cooking, and the long chill time in the fridge that every other good recipe requires? Honestly, I don't know how it is good, but it just is. And it comes in cute individual mason jars. Who doesn't love that?

Looks so good - I love the twisted lime slice to top it off. I'll be trying this out for sure! Where did you get the jars?

Jackie, I got these jars at our local Kroger. I wonder if it is a Southern thing to have canning equipment at the grocery store? Let me know if you have any trouble finding them. Small ramekins would work, too, but you know mason jars are cuter!

I LOVE cheesecake, & if there's lime involved, even better. I probably wouldn't have tried microwaved cheesecake, but hearing you're a cheesecake snob, I'm goingn to take your word for it! I need to try this out pronto!
